Direct-baked products such as biscuits and crackers place a specific demand on the conveyor that carries them through the oven: the belt surface must be flat and smooth enough to give an even product base, and it must transfer heat uniformly across its full width. An open mesh belt would imprint its pattern into the dough and bake unevenly. The Wire Belt Rolled Baking Band, known throughout the baking industry as a “Z belt”, s engineered for exactly this duty, and is supplied and supported in New Zealand by Advanced Packaging Systems (APS).

Wire Belt Rolled Baking Band
What Is a Rolled Baking Band?
A Rolled Baking Band is a solid-surface steel baking belt produced from a duplex unilateral spiral woven mesh that is forced through a rolling process. Rolling flattens the mesh into a completely flat, smooth carrying surface and reduces the belt thickness, without compromising heat efficiency. The result is a belt of low mass and high strength that still allows good air circulation around the product.
Because it combines a solid baking surface with a light, strong structure, the Rolled Baking Band is the standard choice where dough is baked in direct contact with the belt. It is commonly installed in biscuit baking tunnel ovens in lengths in excess of 100 metres, operating in baking zones at temperatures up to approximately 310°C.
Why the Belt Surface Matters in Direct Baking
In direct-contact baking, the belt is part of the baking process, not merely a means of transport. The surface determines the colour, texture and appearance of the product base. A flat, uniform surface ensures consistent heat transfer across the whole belt width, so that products at the edge of the band bake to the same standard as those in the centre. This uniformity is essential for maintaining a consistent product from a tunnel oven that may run continuously for long production shifts.
The flat surface also means the belt is suitable for conveying both soft and hard doughs through the baking process without the dough being forced into an open mesh pattern. One qualification applies: Rolled Baking Bands may not be suitable for soft doughs with a high fat content, where the dough can flow into the mesh structure during baking. APS can advise on suitability for a specific product.

Construction and Operation
The Rolled Baking Band is friction-driven by means of a large-diameter drum, commonly placed at the out-feed of the tunnel oven, rather than by sprockets engaging the mesh. This drive method suits the long, high-temperature runs typical of biscuit and cracker ovens and keeps the belt structure simple and hard-wearing. The belt is manufactured in stainless steel — Grade 304 as standard — for durability and hygienic cleaning in a food production environment, and its reduced mass helps the oven reach and hold temperature efficiently.

Applications
The Rolled Baking Band is used across the baking sector for products that require a solid baking surface and even heat transfer: sweet and savoury biscuits, cookies, crackers and similar flat baked goods produced in direct-heat tunnel ovens. It handles both soft and hard dough formulations, subject to the high-fat qualification above, making it a versatile choice for bakeries running a range of product lines through a single oven.
The Rolled Baking Band in the Wider Wire Belt Range
The Rolled Baking Band is one belt in a complete Wire Belt stainless steel range, and it is usually specified alongside other belt types across a production line. Where cooling rather than baking is required — for example in bakery cooling spirals — the open Ladder-Track™ belt is the common choice, while open-mesh belts such as Flat-Flex® and Honeycomb are used for washing, cooling and coating stages. For a full overview of how these belt types are matched to each stage of a food process, see the APS guide to food-grade conveyor belts for food processing.
Rolled Baking Bands in New Zealand
Advanced Packaging Systems is the exclusive New Zealand agent for Wire Belt. The APS technical sales team can measure and specify a replacement Rolled Baking Band to match an existing tunnel oven — belt width, mesh pitch and drum arrangement — and advise on suitability for a given dough and product. APS supplies the wider Wire Belt range to the New Zealand food processing and bakery sector, with local stock and support from its Auckland base.
