Yoghurt is a deceptively demanding product to manufacture consistently. Texture, mouthfeel, viscosity and stability all depend on how well stabilisers, milk solids and fruit are mixed into the base before fermentation and filling. Poor dispersion shows up as lumps, grainy texture, separation or inconsistent set. High shear mixing addresses these problems at source, and Silverson high shear mixers are widely used across yoghurt production for exactly this reason — supplied and supported across New Zealand by Advanced Packaging Systems (APS).

The Mixing Challenges in Yoghurt Production

Several stages of yoghurt manufacture depend on effective mixing: hydrating the stabiliser system, incorporating milk powders and proteins into the base, standardising the mix, and preparing fruit and flavour additions. Each of these can be a bottleneck or a source of quality defects if the mixing step cannot fully disperse and hydrate the ingredients. A high shear rotor/stator mixer works the product intensively through a fine gap, breaking down agglomerates and driving rapid hydration in a way that simple agitation cannot.

Dispersing and Hydrating Stabilisers

Yoghurt relies on gums and hydrocolloids — pectin, xanthan, locust bean gum, carrageenan, gelatin, modified starch and others — to build viscosity, control syneresis (whey separation) and give the finished product its body and mouthfeel. These stabilisers are difficult to add: sprinkled into a tank they tend to clump, forming partially hydrated lumps or “fish eyes” with dry powder trapped inside, which never fully deliver their functional value. A Silverson high shear mixer disperses the powder into the liquid and hydrates it rapidly and evenly, so the full functional performance of the stabiliser is achieved with less waste and more consistent results from batch to batch.

Incorporating Milk Powders and Proteins

Many yoghurt bases are standardised or fortified with skimmed milk powder, milk protein concentrate or whey proteins — particularly for high-protein and Greek-style products, where solids are increased to build texture. Adding these powders by hand or by simple agitation risks lumping and long mixing times as the powder wets out slowly. High shear mixing, and in particular a powder/liquid mixer such as the Silverson Flashmix, draws the powder into the liquid under vacuum and disperses it instantly, eliminating airborne dust and agglomerates and producing a smooth, fully hydrated base more quickly.

Fruit and Flavour Preparation

For fruit yoghurts — whether stirred, fruit-on-the-bottom or blended — the fruit preparation itself often calls for high shear. The intense shearing action can rapidly break down fruit, including large or frozen pieces, to a controlled consistency in a single operation, and the same mixer can incorporate sugar, flavourings, colours and additional stabiliser at the same time. This gives a uniform fruit base that blends cleanly into the yoghurt without streaking or separation.

The Silverson Range for Yoghurt Production

Silverson supplies mixers to suit each stage and scale of yoghurt production, all built to hygienic standards appropriate to dairy processing:

  • Batch mixers — for stabiliser hydration, standardising and fruit prep in vessels, from pilot scale up;
  • In-line mixers — for continuous or higher-volume duties, mounted in the process pipework;
  • Flashmix powder/liquid mixers — for rapid, dust-free incorporation of milk powders, proteins and stabilisers under vacuum;
  • Ultra Sanitary in-line mixers — where the highest hygienic standards and full cleanability are required.

All are designed for clean-in-place (CIP) operation and the hygienic construction expected in dairy environments. The broader principles are covered in the APS guide to high shear mixing in dairy processing.

Protecting Quality Across the Line

Mixing sits alongside other quality-control steps in a yoghurt line. Incoming milk powders, stabiliser blends and fruit are commonly safety-screened to remove foreign material before they enter the process — a role served by Russell Finex vibratory sieves, which APS also supplies. Combining thorough mixing with check-screening helps deliver a consistent, contamination-free product, which matters both for the domestic market and for dairy exporters meeting strict quality requirements.

Yoghurt Production in New Zealand

Dairy is central to New Zealand manufacturing, and yoghurt producers here range from large processors to specialist and artisan brands. Advanced Packaging Systems supplies and supports Silverson high shear mixers for New Zealand dairy and yoghurt manufacturers, and the APS technical team can specify the right mixer type and scale for a given base, stabiliser system and production volume, and support installation and servicing locally. Contact APS to discuss high shear mixing for a new or existing yoghurt line.
